no bake date cookies

dates6
almond butter3 tablespoons
flax meal1 tablespoon
unsweetened coconut flakes1 tablespoon (and a few extra pieces for topping)
  1. add everything to a food processor and give it a whirl
  2. scoop mixture with a small cookie scoop & roll into balls (apx 1 tablespoon)
  3. add a few pieces of the coconut flakes on top of each ball & and flatten with a fork

eat immediately or refrigerate and enjoy them cold
