sweet potato, cinnamon, & pecans

You won’t believe how delicious this combination of ingredients is

  • sweet potato: 1
  • cinnamon: 1 teaspoon (start with less and add to taste)
  • pecans: 6-10
    • cover sweet potato in tin foil and place in a baking dish
    • bake at 425° for approximately 90 minutes (you want the sweet potato to cook until really soft and it starts to carmelize)
    • peel the skin from sweet potato and put it in a bowl
    • add the desired amount of cinnamon and mix well with a spoon
    • top with whole or chopped pecans
