garbanzo beans | 1 can (apx 1 1/2 cups) (drained and rinsed) |
lemon juice | 3 tablespoons (freshly squeezed) |
sweet potato | 1/4 cup (baked in tinfoil at 450˚for 1 hour 15 minutes) (or longer, depends on the size) |
garlic | 1 clove (minced or finely chopped) |
tahini | 1/4 cup (i like to buy mine at trader joe’s) |
<put all the ingredients in a food processor and mix until smooth. dip your favorite veggies in it!>
tips:
for the sweet potato, I like to cook mine until they are starting to carmelize. the sweet potato basically starts to ooze out of the tinfoil
also, if you don’t have a food processor, you can mash the ingredients with a fork and make a chunky hummus
